PASCAL HAAG is a vegan chef. His creative plant based cuisine is not only extraordinarily delicious, but also very sustainable. He's a co-author of the cookbook LEAF TO ROOT which is about using all the parts of a plant. He developed over 70 recipes with ingredients one would usually throw away.
